After work, I had a little time to kill before I needed to meet friends for dinner. What better way to spend that time then at a tasting? None, I know! I found out about the tasting because I follow Chat’s Liquors on twitter. It’s a wine and spirits shop in SE DC by the Eastern Market metro. The owner, Burnie Williams, you won’t find a store owner more knowledgeable than him. Trust me, you won’t.
As for the tasting, it was of Diep9 Genever. According to their website, each Diep9 genever batch is artfully distilled at De Moor, Belgium’s smallest active grain distillery, from high quality maltwine, a mash of milled grains such as rye, wheat, and malted barley. After fermentation, the grain mash is distilled for the first time in an authentic copper pot still.
The grain alcohol obtained from the primary distillation is then distilled for a second time in an authentic copper pot still with the addition of 9 botanicals, resulting in an herbal flavored malt spirit. Similarly, a second grain mash is distilled two consecutive times without the addition of any botanicals in order to obtain a grain neutral spirit.
The two spirits are then blended together and diluted with water to 35% Alc. by Vol. (70 PROOF) resulting in what is known as a genever.
It was explained to me that Genever is similiar in style to gin. Which makes sense due it to its botanical flavoring. Their esteemed mixologist, Anthony Rivera, was on hand to talk about the spirit and give us cocktail suggestions. I tasted the old genever, young genever, chocolate, vanilla, and red currant genevers. I ended with the cocktail, the Oude Fashioned. The recipe is below.
2 oz Diep9 old genever
1/2 oz simple syrup
3-4 dashes Angostura bitters
3-4 dashes orange bitters
Add genever, sugar, and bitters into an old-fashioned glass. Add ice. Stir 40 times. Garnish with an orange zest.
While tasting, I talked with a gentleman that was moving back to the area. We talked about the genever at first, then moved on to his ex-wife, vcrs, Criminal Minds, and the government. I killed all the time I need to, and went home with a bottle of red currant genever.
